How do I change the temperature on Danfoss RET2001OT Open Therm?

Press the up or down selector buttons.

Press < or > at any time to adjust the desired temperature.
SET appears in the display while adjusting.
Release the button and the display returns to showing actual room temperature.
Each press changes the temperature by 0.5° C. User Guide, p. 2

Can I set different temperatures for away mode on Danfoss RET2001OT Open Therm?

Yes. Enter parameter setting mode and adjust P07 to a temperature between the low limit (P05) and high limit (P04). Default away mode temperature is 18 °C. User Guide, p. 3
